How to Modify Amish Friendship Bread into Perfect Blueberry Muffins

If you have a baggie of Amish Friendship Bread ready to go (Day 10), use this recipe if you'd like a delicious blueberry muffin instead of the tradtional cinnamon bread.

Ingredients

  • remaining friendship batter
  • 3 eggs
  • 1 cup oil
  • 1/2 cup milk
  • 1 cup sugar
  • 1 tsp vanilla
  • 3/4 tsp cinnamon
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 2 1/3 cups flour
  • 3 tsp lemon juice
  • 4 drops lemon essential oil could sub 1/2 tsp lemon zest
  • 1 1/2 cups blueberries

Instructions

  • Preheat oven to 325° convection or 350°.
  • Combine all ingredients in a glass or plastic bowl (except the blueberries). Stir ingredients together. It should form a pretty wet mixture/batter.
  • Add 1 1/2 cups blueberries to the batter and stir.
  • Divide the the batter into muffin tins. Spray the tin or liners before filling. Fill a little more than 3/4 full to get 2 dozen muffins.
  • Bake on convection at 325° for 25 minutes (or 350° if not a convection oven).
