Herb Roasted Potato Perfection

These Herb Roasted Potatoes are great for entertaining during the holidays or enjoying with your weeknight dinner. It starts with a simple ranch seasoning and herb mixture and ends with crispy, golden, flavor-packed potatoes bites.

Homemade + Clean Ranch Seasoning

Ranch seasoning and dressing are favorites at our house. They make great base flavorings for a variety of recipes: chipotle ranch dressing, Mexican ranch dressing, ranch potatoes, ranch seasoned chicken, creamy ranch veggie dip, etc.

The seasonings in these Herb Roasted Potatoes are straight from my Homemade Ranch Seasoning recipe. The ingredients are squeaky clean– Whole30 clean! Check out the seasoning recipe here and a million other ways it can be used.

What kind of cookware do you use to roast potatoes?

I often use a cookie sheet with parchment paper to roast most of my veggies. Sometimes an iron skillet works great too!

Do these reheat well?

They work great for meal prep and leftovers. Just pop them in the microwave for 30 seconds and they are perfect. Or, reheat in the oven. They’re good for 2 or 3 days after the initial roast.

What do you serve them with?

I serve them with steak, grilled chicken, pork chops, or any meat! They are a classic that go with a classic “meat ‘n potatoes” dinner. My kids love them with chicken nuggets in their lunches, as well!

These Herb Roasted Potatoes would also be great loaded with bacon, cheese, chives, and drizzles of ranch dressing!! Loaded Herb Spuds?! Anyone?!

Herb Roasted Potatoes

These herb roasted potatoes are a crowd favorite, including kids! They fancy up a dinner but are so simple to make; they're also clean and healthy as they are Whole30 approved!

Ingredients

  • 6 large Red Skin Potatoes (about 4 cups)
  • 2 tbsp olive oil
  • 2 tsp homemade ranch seasoning

Homemade Ranch Seasoning Mixture (only use 2 tsp of this mixture for above recipe)

  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp dried parsley flakes
  • 1 tsp dried dill weed
  • 2 tsp ground sea salt

Instructions

  • Chop your potatoes to desired size and place in bowl. Size will determine cooktime.
  • If time, soak in water for 10-30 minutes. If in a hurry, simply skip this step.
  • Coat with 2 tbsp of olive oil and 2 tsp of the Homemade Ranch Seasoning Mixture and toss together until well coated.
  • Place on a cookie sheet with parchment paper or in an iron skillet. The cookie sheet will give you a crispier result as the potates will have more room to release moisture. Bake for 25-30 minutes at 425 degrees. This will depend a little on the size of potatoes chunks.
