Grilled Meatballs With Cauliflower Mash

It’s as easy as 1, 2, 3. Literally. For these grilled meatballs, throw all the ingredients in a bowl, mash ’em up, roll them out, and you’re ready to cook!

The summer heat in Michigan is getting to be quite steamy and not kitchen-friendly at all. Why not grill some meatballs to beat the heat and feed the family?! My kids can’t get enough of them and neither can I.

I’ve included instructions for grilling the meatballs, oven cooking, or pan searing them. So, here ya go!

Flavors from the Old Country

My heritage is pretty thick with “flavors” from the old country. My grandparents immigrated from The Netherlands in the 50’s and our family always attributed this to Grandma’s particular cooking style and delicious recipes (and also her tendency to keep expired food long after its expiration date).

A family favorite has always been Grandma’s meatball recipe. Usually, they were served up in a steaming saucepan smothered with gravy and bursting with flavor…but always mysterious flavors and like nothing we enjoyed anywhere else.

After visiting Europe a couple of years ago, I enjoyed the best meatballs, potatoes, and red cabbage while in Berlin, Germany. EXACTLY, like those on Grandma’s Sunday dinner table!

Finally, I’ve created my own version with those mysterious and delicious flavors served over cauliflower mash. The perfect combo from the old country.

Grilled Meatballs

To change things up a bit, and beat the summer heat, I’ve really enjoyed grilled meatballs. I love that char flavor that is added to anything grilled and it provides a little modern world to these traditional meatballs. However, I’ve also included instructions for cooking these grilled meatballs in the oven and on the stovetop. Any way you cook them, they will still knock your socks off!

Keto + Whole 30 + Paleo

Last of all, let me put a quick health plug in for this whole meal!! Served with cauliflower mash, this meal is 100% great for a Keto diet. It’s also a delicious and compliant Whole30 meal and Paleo (if you check your ingredients for the bone broth). Sometimes it’s hard to believe you can eat this good and still fall into these healthy food categories, but you can!

Leftover Meatballs

For my little family of 4, this is one of those meals that we always have leftovers for. This is perfect because, if you read my article, How to Meal Prep Lunches | 6 Healthy Hacks, you probably noticed how much we like leftovers at our house!

Grilled Meatballs with Cauliflower Mash

Gilled, oven cooked, or pan seared, these meatballs are flavored with old world spices and are reminiscent of those found in Germany and the Netherlands. Soaked in gravy and served with cauliflower mash, they are Whole30, Paleo, and Keto. Not to mention, kid favorites!

Ingredients

  • 2 lb ground beef or venison
  • 2 eggs
  • 1/4 tsp salt
  • 1/4 tsp ground cloves
  • 1/4 tsp ground allspice
  • 1 bay leaf
  • 1/4 tsp salt
  • 1/2 tsp ground black pepper
  • 1 1/2 tbsp minced onion I use dried minced onion from Costco
  • Cauli Mash
  • 2 heads cauliflower 8-10 cups chopped
  • 1 tsp balsamic vinegar
  • 2 tbsp avocado or olive oil
  • 1 tsp minced garlic I use refrigerated
  • 1/4 tsp thyme
  • salt and pepper to taste
  • Gravy
  • 1 packet beef bone broth Sam’s Choice/Walmart has a great option
  • 10 oz warm water
  • pinch of salt
  • sprinkle of pepper
  • 1 tbsp tapioca starch arrowroot or cornstarch work too
  • 1/2 cup warm water

Instructions

Meatballs

  • For the meatballs, simply place all the ingredients in one large bowl and mash together using your hands.
  • Form into large meatballs (about 2 inches diameter).
  • For grilled meatballs, heat the grill to 300 degrees before placing meatballs directly on the rack.
    (if using venison, spray or brush the rack with oil first).
  • Cook for 5-7 minutes on each side or until 165 degrees F.
    (Could also do without flipping them).
  • For the oven, cook at 400 degrees for 10-14 minutes.
  • For the stovetop, sear in a dutch oven or skillet on medium high heat, turning a little every 3-5 minutes. They are finished when the juices run clear or the temperature is 165 degrees F.

Cauli Mash

  • Chop the base off of the cauliflower heads and divide them into 3 or 4 large sections.
  • Place in a cooking pot or the instant pot with about 2 cups of water (3 minutes in IP) and allow to boil until softened.
  • Drain the water, add ingredients (balsamic, thyme, pepper, salt) and mash together. I find that an immersion blender gives me the best texture for cauliflower mash.

Gravy

  • In a skillet or sauce pan, combine the bone broth packet and 10 oz of water. Turn the stove on medium to high heat and bring to a boil.
  • In a separate cup or bowl, combine 1 tbsp tapioca starch (substitute arrowroot or cornstarch) and 1/2 cup of warm water and stir until well incorporated. Add to the boiling broth and allow it to thicken while you stir.
  • Remove from heat and add the cooked meatballs and pan drippings (if any).
  • Throw in the bayleaf and some salt and pepper to taste.
    Enjoy!

Notes

There are many substitution possibilities in this recipe. Cornstarch or flour can be used instead of tapioca starch. Also, as stated in the recipe, these meatballs can be done in the oven or stovetop instead of the grill.

Let me guess, you love a good cocktail but you’re eating “clean” right now.

Or, you’re doing your first Whole 30 and you are DYING for a delicious beverage that makes you feel like you are participating in something special.

Isn’t that what cocktails are all about? Celebrating and participating in special moments and events with a little indulgent alcoholic beverage to seal the occasion?!

And, sometimes they’re perfect for making those ordinary moments feel special. Sometimes, you don’t even need a reason to enjoy a good beverage. Especially if it’s this Cucumber Gin Fizz Cocktail or Mocktail.

Cocktail or Mocktail

Well, if you are looking to celebrate those ordinary days or extraordinary, this gin tonic cocktail remix is going to make you smile! This Cucumber Gin Fizz will even make your taste buds smile a bit. If you’re looking for a more traditional holiday cocktail, try the No Simple Syrup Maple Old Fashioned.

But, fear not! If you are doing a Whole30, Keto, Bulletproof, AIP, Paleo or other diet and you really don’t want to cheat, I’m sure a Cucumber Gin Fizz Mocktail will bring a little extraordinary to your hydration game and some joy to your day.

How to Make My Cocktail Paleo or Whole30 Compliant

WHOLE 30

So, as promised, here is my recommendation for making this Cucumber Gin Fizz a Whole30 compliant and/or Paleo approved drink.

For a Whole30 compliant drink, simply skip all alcohol. That’s it. This drink is 100% Whole30 if you omit the gin.

Now, we could have a big discussion about SWYPO here, but I think that is something you will personally have to evaluate based on your Whole30 and your personal needs and goals.

PALEO

Which transitions me into making this a Paleo drink.

How can I make this Cucumber Gin Fizz paleo?

Hate to break it to you, but if you are hard-core Paleo, you already know this.

Alcohol isn’t really Paleo.

The above article is pretty spot on and provides healthy ways to approach alcohol. I also think you’ll agree that living a 100% perfectly Paleo diet isn’t really possible or necessary for most.

This Cucumber Gin Fizz Mocktail or Cocktail can be made with gin and still be an almost Paleo drink as the mixers are all sugar free (naturally sweetened with fruit). It’s basically soda water and gin with the perfect sweet and sour from the lime and the perfect zesty zip from the raw ginger root.

Also, it’s a perfect cocktail choice if you are watching your carbs (Keto) and eating clean (Paleo). Cucumber Gin Fizz Mocktail or Cocktail uses 1/2 a lime which also helps with insulin sensitivity! Bonus! It’s really a very healthy drink if you are going to drink.

Cucumber Gin Fizz Mocktail or Cocktail

This Cucumber Gin Fizz is a healthy, sugar-free, low carb, keto friendly, Paleo friendly, and Whole30 friendly drink to enjoy all year long.

Ingredients

  • 1 oz Gin
  • Cucumber
  • 2 Fresh Mint Leaves
  • 1/2 tsp Grated Ginger Root
  • 8 oz Club Soda/Soda Water
  • 1/2 Fresh Lime

Instructions

  • Begin by dicing the cucumber into small cubes. Use enough to cover the bottom of the glass (about 2 slices diced).
  • Cut a piece of ginger root and peel the outer bark. Using a grater, or garlic mincer, grate about 1/2 a tsp of ginger root into the glass.
  • Squeeze 1/2 a lime into the glass.
  • Add two mint leaves.
  • Pour 1 oz. of gin into the mix. Muddle the contents together with a muddler or a heavy spoon (I use my meat hammer).
  • Let set for about 10 minutes.
  • Add some ice and club soda. Remove any annoying leaves and particles and garnish with a fresh leaf.

Notes

  1. Paleo- You know that alcohol isn’t really Paleo. But, this recipe doesn’t need any other adaptations except to remove the gin to be a very Paleo compliant mocktail.
  2. Keto- You will be at 77 calories if you make this with Vodka but your net carbs remain at 3.8g. I recommend keeping the recipe as is and possibly subbing out the lime to reduce carbs (although, the lime has so many other health benefits like helping with insulin sensitivity). 
  3. Whole 30- Omit the alcohol.
  4. Extra Delicious and Indulgent? You can use 1/2 ginger beer and 1/2 club soda for some added spice and flavor.

Homemade Healing Bone Broth

Does anyone else notice that “bone broth” is all the rage right now? It comes in drinks, powders, soups, boxes, cans, etc. The funny thing is, this is the good stuff that used to be in our grandparents’ soups. It’s nothing new at all. Just good ol’ real food made using the whole animal. Nothing goes to waste, just like it used to be.

Broth Versus Bone Broth

So, what’s the difference between broth and bone broth? Broth is made by cooking meat or vegetables in water to create a delicious broth full of the nutrients from ingredients it was boiled with. Bone broth is the very same thing except that bones, tendons, organs, feet, skin, and nearly every part of the animal are cooked in water for an extended amount of time, or under high pressure, to create a more nutrient dense broth.

A good bone broth should congeal and become like jello as it cools (that’s because gelatin is made from the bones of animals). Plain ol’ broth will not congeal as it doesn’t have the collagen present that bone broth does.

Pressure Cooker Versus Slow Cooker

Have you heard that it’s better to make bone broth in a pressure cooker, like the Instant Pot, instead of a slow cooker or simmer on the stovetop? I’ve read up on this and found some interesting information from The Paleo Mom about slow cooked bone broth and pressure cooked bone broth. Basically, the final thought is that pressure cooked is healthier as it allows for less oxidization in the broth. But, you can certainly achieve mostly the same result by slow cooking chicken bones in water for 20-24 hours.

Does the Quality of Meat Make a Difference?

This is a question I’ve had for a very long time. If I’m leaching out nutrients at a high pressure from the WHOLE animal, I’d really like it to be uncontaminated and as healthy as possible. I did some reading on this awhile ago and found some I interesting and even scary information (thank you Google). I read an article about organically raised chickens leaching lead into the broth. Wow, that got me thinking maybe organic isn’t always better? Well, once again, The Paleo Mom did the hard work and addressed this concern. Read about it here. I still try to use cage free or organic meat when making bone broth, but I also make it without at times.

Hopefully I’ve addressed many of the questions or sent you in the right direction to find more scientific, research based information about bone broth. Obviously, I am a huge fan of The Paleo Mom. Her writing is thorough and scientific.

What Do You Add to Bone Broth?

I add whole pieces of celery, carrots, and onions. I also splash some apple cider vinegar which helps with leaching out all nutrients from the bones (according to some). Of course, I also add about 5 cups of water and chicken bones. Sometimes I add spices like rosemary, thyme, and sage. And that’s it!

Is Bone Broth Healthier For You?

Bone broth is healthier for you. It’s especially good for gut health and gut healing. It also has more protein in it than broth. The good stuff in the bone broth comes from the collagen which is leached out of the bones. The collagen helps YOU grow stronger hair, bones, joints, and has healing properties for the lining of your stomach. Read The Paleo Mom’s article on bone broth for more information. She also has some great podcasts and other insights into making your own bone broth.

What Are Some Ways To Use Bone Broth?

There are a million and one ways to use this super food! First of all, I typically make bone broth from chicken bones. I usually do this after making a whole chicken for dinner. I save the bones in the freezer until I’m ready to use. You can also save chicken thighs and other bones from other meals. Here is my quick list of ways to use chicken bone broth.

  1. Brothsicles- I freeze bone broth in silicone cupcake inserts and use them in recipes or to deglaze a sauté pan. I got this idea from Cook By Color Nutrition.
  2. Fresh or frozen bone broth in smoothies. The Whole Smiths has a great “Cold Buster” smoothie in her recent cookbook which uses bone broth.
  3. Use it in soups.
  4. Use in casseroles.
  5. Drink a glass plain.
  6. Create a sauce or gravy with it.
  7. Soak your kids’ bread in it for a healthy and nutritious meal.
  8. Add it to the sauté in my Healthy Chicken Pasta Dinner in 30 Minutes recipe.
  9. Add it to my One Pot Sausage and Veggie Meal.

Can I Get My Broth To Be More Congealed?

If you find your bone broth is too thin after cooling, be sure to keep the water content at minimum on your next attempt. I put about 5 cups of water into my pressure cooker and yield about 4 cups of broth.

Homemade Healing Bone Broth

This recipe explains how to use an electric pressure cooker to make chicken bone broth.
Course Soup
Servings 4 cups

Equipment

  • Pressure Cooker

Ingredients

  • 1-2 lbs chicken bones I use one whole chicken with the meat removed
  • 1 onion
  • 2-3 stalks celery
  • 3-5 carrots
  • 1 tbsp apple cider vinegar
  • 5 cups of water Enough to cover half the bones but no more.

Instructions

  • Dump everything into the pressure cooker. Seal the the steam vent valve. Set for 2 hours and 25 minutes (I have done as little as 1 hour and 30 minutes).
  • When cooking is complete, let it naturally release.
  • Pour broth through a screen and store in a mason jar in the fridge.
  • Or, you can pour into silicone ice trays or cupcake inserts and make frozen brothsicles.

Notes

You can also use a slow cooker and cook for 20-24 hours to achieve the same results.
 
When the broth has cooled, you will see a fat layer sealing the top of the broth. It’s recommended that you remove this before eating, especially if the chicken you used was not organic, free range. Animals store toxins in their fat cells.
 
Keeps for 2 weeks WITH the fat sealing the top of the broth.
